Painting the hull with two pack paint.

Is two pack paint the way to go? If so, which is recommended?

Martin Sly uses 2 pack - doesn't have to be marine...Sly often uses auto paint. I suspect it is harder.
He uses a wet on wet technique - both paint and varnish.
Like with all painting, preparation is the key.

I'm nearing completion on my Sabre have put a layer of mat over the whole of the bottom as I had to use 4mm ply. I was going to just varnish with a UV resistant product to save on cost and weight. If the boat sails well I might put a more expensive finish on it at a latter date. Does this sound OK?

UV resistance isnt really necessary unless you intend to leave the boat upside down in the sun. The idea is good but use a varnish that can be removed easily and completely (soft) when you come to do the final finish. Try to use a varnish that will be compatible with the final finish in case you miss removing some of it.
If you are using 2 pack finish it is probably best not to use an oil based varnish. I used a water base interior varnish (Acrylic ?) in the same situation when my final coats where 2 pack (Epoxy)
